Fish & Seafood Masterclass

The Fish & Seafood Masterclass will open your eyes to the wonderful produce that comes from the sea around this island nation - and teach you how to cook it well! Ivan will guide participants through the basics of how to choose the best fish in season for a dish,  to making classic fish stocks.Guests will learn the techniques to cooking fish just right and which sauces to pair with particular fish and seafood recipes. There will be six courses on the menu and you will be able to take notes through the class .

On the menu:

  • Cioppino
  • Herb crusted John Dory & Curried Mussel Broth
  • Scallops, Roasted Cauliflower & Pea Butter
  • Roasted Ray Wing & Brown Caper Butter
  • Cockles/Clams, Chorizo, Peas & Linguini
  • Spiced Crab Salad

(The menu is subject to minor changes depending on the freshest available fish).

You will get to taste everything, with a glass of prosecco or beer on arrival.

About Your Host 

Ivan Varian trained at the Ballymaloe Cookery School before working in Michelin starred kitchens and then as a personal chef to Louis LeBroquey, The Duke of Devonshire, and several A-listers. He set up The Dalkey Food Company in 2010 selling quality gourmet soups, breads, sorbets and more to cafés, pubs and delis.  Ivan spreads his passion for food and cooking with the live event Gulp- The science of Taste around festivals around Ireland. He is also a DJ, playing at Electric Picnic, Body and Soul and The Beatyard.
