We are very excited to host Ireland's only expert knife sharpening tutorial with Swiss-born knife maker, chef and wood maker, Daniel Koenig.
In this class, you will learn about the art of how to sharpen knives using traditional whetstone methods. We will explore the difference between Japanese and European blades and how best to keep knives sharp and well maintained. Daniel will also share some invaluable tips and tricks on how to hone your own blades at home, maintaining their edge for that perfect sharpness. We will also cover the various steels used in knife making, the craft of forging, blade geometry and the different techniques and tools used.
We ask attendees to bring along one knife to practice sharpening, in the hands-on part of the class. Attendees will also be offered 10% off knives and sharpening tools on the day.
